Focaccia pugliese

Ma quanto costa mezzo chilo di farina? E una manciata di pomodorini? Qualche oliva si trova in casa no? Come pure l'origano e un filo d'olio extravergine di oliva. Basta andare a comprare, se proprio non ce l'hai, un lievito di birra e il gioco è fatto.
Una delle cose che ho imparato in cucina è che non bisogna mai disperarsi se arrivano degli ospiti all'improvviso. C'è sempre qualcosa in casa per creare una cena meravigliosa.

Immaginate che suonino alla porta e, proprio nella serata in cui avevate deciso di mangiare una semplice frisella con olio e sale, per guardare un film in solitaria in tv, arrivano 4 amici tutti allegri per stare insieme a dire chiacchiere.
La cena più straordinaria che io possa immaginare è ... focaccia,  mortadella e, per i cultori dei sapori veri della Puglia, provolone piccante.

'E che ci vuole?' (trad. dal pugliese: basta pochissimo tempo!) sono le altre parole magiche da imparare e ripetere come un mantra.

Diciamo innanzitutto gli ingredienti, giusto per vedere cosa serve (per la ricetta base da fare veloce veloce).

Focaccia pugliese 

- 600 g di farina 00
- 1 cucchiaino di zucchero
- 2 cucchiaini rasi di sale
- 1 lievito di birra (anche disidratato va bene)
- 370 ml di acqua tiepida (circa... dipende dalla farina)
- mezzo chilo di pomodorini ciliegino
- olive 
- origano
- 100 ml di olio extravergine di oliva
- sale grosso

nota: per rendere ancora più soffice la focaccia si può aggiungere all'impasto anche una piccola patata lessa e schiacciata con lo schiacciapatate

Accompagnare con : mortadella, provolone piccante, caciocavallo ecc....

Impastare velocemente la farina con il lievito, lo zucchero, il sale (alla fine) e l'acqua tiepida, mentre si parla tutti insieme. Lavorarla sulla spianatoia. Quando è diventata elastica, fare due croci, una con la mano per benedirla e una col coltello per agevolare la crescita.

Mettere al calduccio a lievitare. Nel frattempo apparecchiare, iniziare a parlare, versare un pò di birra nei bicchieri, pulire giusto qualche verdura, cercare le olive e l'origano...
E' già passata un'ora. La pasta è lievitata. Andare a controllare.
Se non ha raddoppiato il volume, aspettare e aprire un altro argomento sul divano.
Bene ... è pronta.
Versare l'olio nella teglia. Ungersi le mani nell'olio. Versare la massa.
Insieme tagliare a metà i pomodorini e spingerli nella pasta.
Distribuire olive. Far nevicare origano e grani di sale grosso. Aspettare un pò, giusto il tempo che la pasta si riprenda dallo shock
Filo d'olio e via, nel forno già caldo a 200° per circa 30/40 minuti.
Aspettare che il profumo si spanda. Aprire ogni tanto lo sportello del forno per completare la magia.
Aprire l'incarto della mortadella sul tavolo, tagliare il provolone.
Stappare altre birre.

How much does a pound of flour cost? And a handful of tomatoes? Some olive is in the house, right? As well as the oregano and a drizzle of extra virgin olive oil. Just go buy, if you do not have it, a yeast and you're done.

One of the things I learned in the kitchen is that you never have to despair if guests arrive suddenly. There is always something at home to create a wonderful dinner.

Imagine that they are playing at the door and, just in the evening when you decided to eat a simple frisella with oil and salt, to watch a movie on TV, 4 friends come all happy to be together.

The most extraordinary dinner I can imagine is ... focaccia, mortadella and, for the lovers of the real flavors of Puglia, spicy provolone.

'What does it take?' (translated from Puglia: just a very short time!) are the other magic words to learn and repeat like a mantra.


Focaccia pugliese

- 600 g  flour 00
- 1 teaspoon of sugar
- 2 teaspoons of salt
- 1 brewer's yeast (also dehydrated)
- 370 ml of  water (about ... depends on the flour)
- 500 g about of cherry tomatoes
- olives
- Origan
- 100 ml extra virgin olive oil
- coarse salt

note: to make the focaccia even softer, you can add to the dough a small boiled and crushed potato with a potato masher

Accompany with: mortadella, spicy provolone, caciocavallo etc ....

Quickly knead the flour with baking powder, sugar, salt (at the end) and water, while everyone is talking together. Work it on a work surface. When it has become elastic, make two crosses, one with the hand to bless it and one with a knife to facilitate growth.

Put in the heat to rise. In the meantime lay the table, start talking, pour some beer in glasses, clean just a few vegetables, look for olives and oregano ...
An hour has already passed. The dough is leavened. Go check.
If it has not doubled the volume, wait and open another topic on the sofa.

Well ... it's ready.
Pour the oil into the pan. Grease your hands in the oil. Pour the mass.
Together, cut the tomatoes in half and push them into the dough.

Distribute olives. Snow oregano and grains of coarse salt. Wait a while, just long enough for the pasta to recover from the shock

Still a little oil and put ocaccia  in the oven already hot at 200 ° for 30/40 minutes. 

Wait for the scent to spread. Open the oven door occasionally to complete the magic.

Open the mortadella wrapping on the table, cut the provolone.

Uncork other beers.
